Wheat Berry Dessert Salad

Ingredients 

1 1/2 Cups Regenerative Wheat Berries

2 Small Packages Vanilla Instant Pudding - Dry
1- 8oz Package Cream Cheese Softened
1- 12oz Container Whipped Topping

1- 15oz Can Crushed Pineapple - Juice Reserved
1/2 Cup Chopped Walnuts
2 TB Lemon Juice

Soak Wheat Overnight

  1. Cook for about 90 minutes in 5 cups water over medium heat or until berries are soft.

  2. Drain and cool well.

  3. Combine cream cheese with dry pudding in a large bowl: stir well.

  4. Stir in drained pineapple and enough liquid to make a thick pudding batter. I use all of the juice from the can.

  5. Fold in whipped topping.

  6. Add cold wheat berries and nuts.

  7. Serve and enjoy!
